I've always enjoyed a prawn cocktail, but with reducing the levels of sugar in my diet, shop bought Marie Rose is just way too sweet for me these days. There are lots of different recipes for it, but here's one that I've settled on.
1 tbsp mayonnaise - don't bother with low fat stuff
1 tbsp thick yogurt - low fat greek or skyr seems to work well
dollop of tomato puree
dash of chipotle Tabasco
dash of Leigh & Perrins Worcestershire sauce
Mix all of the ingredients together. Dump the prawns in and ensure that they're suitably drenched in the sauce. If using frozen prawns add a little of the liquid from thawing, it improves the flavour of the sauce and can improve the consistency without adding water. Dust with smoked paprika or my current favourite: Cayenne pepper.
In terms of salad use whatever you have available - I've seen recipes which prescribe Little Gem (which works well) but as I like strong flavours, I like mine laced with rocket and anything else that's strongly flavoured.
There's no looking back to shop bought sweetened stuff!
